Stained Glass Biscuits
Ingredients ~
175g plain flour, plus extra
100g butter, cold-cut into chunks
50g powdered sugar
2 tbsp milk
12 fruit-flavoured boiled sweets
Thin ribbon, to decorate
Butter paper
Method ~
- Heat oven to 160*C. Cover 2 large baking trays with butter paper.
- Rub the butter into the flour till it resembles bread crumbs.
- Mix in the sugar and milk, then turn out and knead briefly on a floured surface until smooth.
- Wrap in cling film and chill for about 30 minutes.
- Sprinkle flour on the work surface and roll out the dough.
- Use 7cm cookie cutters to cut out shapes, then use 4cm cookie cutters to cut out the middles. Make a hole in the top of each biscuit, then carefully lift onto the baking tray. Re-roll leftover pieces of dough to make more biscuits.
- Crush the different coloured sweets in different Ziploc bags with a rolling pin.
- Put the crushed candy pieces in the middle of the biscuits. The sweets should be level with the top of the dough.
- Bake for 15-20 minutes or until the biscuits are light brown and the sweets in the middle have melted.
- Leave to harden, then gently remove the butter paper.
- Thread with ribbon in the holes on top of the cookies.
